We prepare our Crispy Pata (pork shank) in a manner which utilizes extended roasting. This technique reduces the amount of fat in the meat before it hits the fryer. We serve with a wonderful Karekare sauce which incorporates peanuts and other native ingredients. Paired with bok choy and other greens, it is a wonderful, healthy alternative, to the traditional version.
As you might expect from a land of 7000 islands, seafood is a mainstay of Filipino cooking. One of our favorites is sauteed shrimp made with garlic, paprika, and other native spices - the combination produces a wonderful red sauce that is rich, buttery, and infused with garlic. The aroma of this dish cooking makes the kitchen seem like heaven! We sell this by the pound - more is better!
